Cabbage with Onion
Latin
aliter: culiculos elixatos mediabiis; summa foliarum teres cum coriandro cepa cumino piper passo uel careno et oleo modico.
English
Another way: boil cabbage sprouts halfway; grind the tips of the leaves with coriander, onion, cumin, pepper, passum or caroenum, and a little oil.
Curiously, this recipe calls for no salt. I suggest adding fish sauce, as appears in essentially every other recipe in the book.
Ingredients
- 300g cabbage, chopped into thin strips
- 1 brown onion, diced
- Pepper
- 1 tsp cumin
- 1 tsp coriander seed
- 2 Tb passum
- 1 Tb fish sauce
- 2 Tb olive oil
Method
- Add the cabbage and onion to a large frying pan or wok along with about 100 ml of water. Cook for 5 or so minutes, until the cabbage is tender and the water has evaporated.
- Add the remaining ingredients to the frying pan, toss everything together, then serve.
