Chicken [meatballs] another way: grind thirty peppercorns, add a cup of the best fish sauce, the same amount of caroenum, and add eleven [cups] of water; set over the steam of the fire.
Apicius does not tell us how to make chicken isicia, but other recipes for isicia generally call for fish sauce, pepper, and other flavorings. If you like, add 1–2 Tb of fish sauce to the chicken mince, along with ½ tsp ground black pepper and a pinch of asafoetida.
Ingredients
- 800 g chicken mince
- 1320 ml water
- 100 ml caroenum
- 100 ml fish sauce
- 30 peppercorns, crushed
Method
- Add the water, caroenum, fish sauce, and pepper to a large pan and heat to just below a simmer.
- Roll the chicken mince to meatballs and add to the large pan. Poach until the meatballs are cooked through, then serve.
