To prepare mature leeks: make a mixture of a fistful of salt, water, and oil, cook the leeks in it, and take them out. Serve with oil, fish sauce, and neat wine.

Ingredients

  • 1 leek
  • Salt
  • Olive oil
  • Fish sauce
  • White wine

Method

Trim any old leaves from the leek and clean out any dirt, then cut into thick slices. Place the leek into salted water, and a little olive oil, and boil for several minutes until cooked, then remove and strain any excess liquid. Dress with a little more olive oil, fish sauce, and white wine, then serve.
