Mastu Spiced Whey

स्रावितं यद्धृतं तोयं जीरकार्द्रकसैन्धवैः । संयुक्तं हिङ्गुधूपेन धूपितं मस्तु कीर्तितम् ॥ ७५ ॥
English
The water that was drained off and kept, joined with cumin, fresh ginger, and rock salt, and fumigated with the smoke of asafoetida, is declared to be mastu.
Ingredients
- 250 ml fresh whey, drained from one batch of śikhariṇī
- ½ tsp cumin seeds, crushed
- 1 tsp ginger juice
- 2 g rock salt (about ⅓ tsp)
- A pinch of asafoetida
Method
- Whisk the cumin, ginger juice, rock salt, and asafoetida into the whey.
- Serve at room temperature or gently chilled.
