XXXIII. YPOTRIMA: piper ligusticum mentam aridam nucleos pineos uuam passam cariotam caseum dulcem mel acetum liquamen oleum uinum defritum aut caroenum.

Hypotrimma: pepper, lovage, dried mint, pine nuts, raisins, date, sweet cheese, honey, vinegar, fish sauce, oil, wine, defrutum or caroenum.

The name is a Greek term for a sauce. The recipe does not specify what to serve it with, but roast meat and seafood are both plausible. I find it pairs well with pita chips or crackers.

Ingredients

  • 50g raisins
  • 50g pine nuts
  • 50g cream cheese
  • ½ tsp ground pepper
  • ½ tsp lovage leaf
  • 2 tsp dried mint
  • 1 Tb date syrup
  • 1 Tb honey
  • 1 Tb fish sauce
  • 2 Tb vinegar
  • 1 Tb olive oil
  • 1 Tb defrutum
  • 100 ml white wine

Method

  1. Place the raisins in a bowl with a little water and microwave for a minute, to soften.
  2. Put the raisins and the pine nuts into a food processor and blend into a paste. Then add the remaining ingredients, and blend together until smooth.
