Prawn rissoles

Seafood isicia [forcemeats] are made from prawns and lobsters, from squid, from cuttlefish, from spiny lobster. Season the forcemeat with pepper, lovage, cumin, and root of laser.

Ingredients

  • 500 g prawns, minced
  • 50 ml + 15 ml fish sauce
  • Pinch of cumin
  • Pinch of lovage
  • Pinch of asafoetida
  • Ground black pepper

Method

  1. Mix the spices together with 15 ml of the fish sauce, then add to the prawns and mix thoroughly
  2. Add 50 ml of fish sauce and 350 ml of water to a saucepan. Bring to just below a simmer.
  3. Roll the prawn mixture into balls and drop into the mixture to cook, around 5 minutes, or until opaque and the centre is above 63C. Remove from the liquid and serve immediately.
